what is apple butter?

“Is it jam, is it butter, and what do I do with it?” These are pretty common questions for us. Andrea likes to say that apple butter is “if applesauce decided it wanted to be a jam.”

 

Jams generally require a thickening agent to get their consistency. Instead, we have a product that relies on the fruit’s natural body to create its thickness, resulting in a much longer cook time in order to achieve a dense texture.  Those two elements are what classifies it as a fruit butter. 

 

But don't let the name fool you. Despite the word "butter", there is no dairy in apple butter. Think more along the lines of peanut butter, or other nut butters; spreadable deliciousness!

how it's made

We make our apple butter using apples from various orchards in the GTA. In fact all of the fruits in our blends are grown right here in Southern Ontario. After coring and slicing the apples, we put them in a slow cooker, peel and all, to keep all the best nutrients. Once all the other ingredients are added in, the cooking process can last anywhere from 8-24 hours and the softened apples are blended to get a smooth, thick consistency.

 

Because we get all of the fruits locally, we can only produce apple butter as long as we are able to get fresh, local apples which is typically between September and December. That means that once a flavour is sold out for the season it won't be available again until the following fall.

Our apple butter was our pilot product and something that we made even before we started jarred. It started as Christmas gifts for friends, then became a source for our wedding fund and even our wedding favours. In our first year we created over 30 flavours, but after vigorous taste testing (and before the discovery of my allergy to apples), we selected the 11 best flavours of all-natural apple butter that would be our lineup, including three no sugar added options.

Apple butter goes really well

  • with cheese and crackers

  • mixed with oatmeal

  • spread on toast

  • as an ice cream topping

  • as filling for a pastry or pie

  • as marinade for your favourite meat cut

  • just on a spoon and into your mouth!
